I was wandering through Albertsons getting some vegetables to make turkey stock with and discovered this in the baking aisle. Previously, the only product sold was the ‘Just Whites’ dehydrated egg whites. These are whole eggs..suitable for omlettes, scrambled eggs, etc. These are dehydrated whole eggs, just as the can says. The container is like a coffe can…foil peel-back lid at the top with a plastic lid for keeping things fresh once opened. Pricing at my local Albertsons was outrageous – $8.25 ea. Figuring the 8 oz. can equals 16 eggs youre looking at $0.50 per egg. Not good. Internet grocers bring that down a bit though. I fired off an email to Deb El (sounds like a town in Iraq, dont it?) asking the usual questions about shelf life and whatnot. Interestingly, this same product is offered in food-service size portions of 50#…but not exactly packaged for long life. However, if youve got a Mormon cannery and a sack of oxygen absorbers perhaps you could repackage it as you see fit. Im already doing well on the dehydrated eggs scene but its nice to see I have another option/source locally, even if slightly overpriced.

Made a turkey today and am in the process of boiling down the carcass and some veggies to make stock. I could never be a vegetarian…just can’t. The turkey is one from the Great Turkey Purchse of 2004 when I wound up with around 100# of remaindered frozen turkeys.

  1. I don’t do a lot of repackaging because it has never seemed cost effective to me. Any idea how much per egg the dried eggs would cost in the 50# containers? And then how much if you repackaged them?

  2. as for storeing eggs, why not store them in the chicken? chicken feed keeps for a really long time, and as long as you only have a hen or 2 they make almost no noise.

  3. One of the local towns had a blitz on drunk driving for Thanksgiving and did a big random stop checkpoint the other night. If you were stopped and passed the sobriety test, you got a free turkey. I could see you going round and round through the checkpoint until you’d collected as many turkeys as would fit in your freezer 😉

    Tag team – get a turkey, hand the truck to Kit while he stows it. She comes back with a turkey and stows it while he goes out for another…. 😉

  5. if you put a chicken in the cabinet then it takes up cabinet space! just keep a couple of em in the back yard and you dont have to build a shelf in the house to keep them on and its alot easier to remember when they have gone past there useable shelf life. 😉

    are one of those most difficult to store items unless they are nitrogen packed in a sealed can. ever considered an indoor farm to raise chickens, rabbits, or even fish for fresh sources of protein? be amazed at what people raise indoors from hydroponics,aquaculture, and small livestock in converted apppartments in cities, all applicable to even your remote area. good to think about. merry xmas, Wildflower 06
